Non-sequitur: Low-carb Pizza
I found a recipe a while back for a low-carb pizza crust. I was eager to try it, but when I went to make the pizzas, it turned out not to be as easy as the recipe had made it look. Since then, I’ve been tweaking both the ingredients and the technique and here’s what I’ve landed on.
This recipe is very high in cheese content, so calories can add up pretty quick, but with toppings, the pizza works out to about 170kcal/slice, which is still pretty great for pizza, and something like 3 net carbs, instead of 25ish. It’s also very filling. You’d have to be pretty hungry to want more than about 3 slices. If you’re worried about eating that much dairy, you can also toss in a little flax seed for added fiber.
Preheat the oven to 450 and toss a pizza stone in the oven to heat up as the oven does.
- 2.5c shredded mozzarella cheese
- 2c riced cauliflower
- 3 eggs
- 1/2tsp salt
- 1tbsp garlic powder (I didn’t have any real garlic)
Ricing the cauliflower is really simple. Basically, just throw it in the food processor for 30 seconds or so.
Toss the eggs into a bowl and whisk them good. Add garlic, salt, and cheese, and mix it all up with a spoon.
Put the riced cauliflower, in a glass bowl, cover it with a paper towel and microwave for 7min (stirring halfway through)
Let it cool a little bit, then add it to the eggy, cheesy goodness. It’s easiest at this point to mix it with your hand.
This makes two pizzas, and it’s important to make two small-ish ones, rather than trying to make one big one - the middle won’t get done if the pizza is too big. If you wanted to split this into 3 pizzas, it would probably work even better.
Take the stone out of the oven, spray it with a non-stick spray (or use olive oil) and plop half the crust mixture down in the center. Use your hand to spread it out evenly and thinly. It will in no way resemble dough - that’s fine. I went way thin, about 1/4in. It’ll crisp up good this way.
Pop it into the oven for 8-10mins, until the edges start to get crispy and the top’s starting to get golden brown.
Take it out, carefully slide it onto a plate, and flip it over, back onto the stone. Now add your toppings to what was the bottom, sprinkle a little more shredded mozzarella on top to hold the toppings on, and put it back into the oven for 6min.
Take it out, slide it back onto the plate, and let it cool for a minute or two.
Then repeat the process for the 2nd pizza.
If you have a ton of toppings, you may still need to eat it with a fork, as it’s not the most sturdy crust, but small slices could just be picked up.

Twelve Years
Today is my twelfth wedding anniversary. This is the point where I would link to my husband’s Facebook/Twitter/LinkedIn/etc. profile and talk about how awesome he is, except he adamantly refuses to have any such profile (he also does not have a cell phone). So I’ll just skip to the talking.
We’ve been through and done a lot in the past dozen years, in no particular order.
- Got a green card
- Started school
- Finished school
- Gone back to school
- Bought a house
- Gone through a major renovation
- Had a kid
- Endured half a dozen eye surgeries and the surrounding uncertainty
- Supported each other through the loss of family and friends
- Started two successful businesses
- Taken a disproportionately small number of vacations
- Adopted a couple of dogs
- …. and a cat
- Made it through tough times without a job
- And a whole host of other things either too trivial or too personal (or sometimes, oddly, both) to mention.
It’s been a journey full of ups and downs, but all in all, mostly ups. It’s been a fun ride and I can’t think of anyone else I’d rather do it with.

Eye surgery No. 7 is in the books
Well, today’s laser capsulotomy went quite well. The procedure itself took about five minutes and my vision returned to normal after only a few hours. My eye felt irritated for a while, but that has gone away now. It does feel tired, though, and after using the computer for a bit this evening, it definitely feels like I need a break.
Laser eye surgery feels really weird. I don’t know how to describe it, exactly. It didn’t hurt at all, but I could definitely feel each laser pulse hitting my eye with a very sharp (as in quick, not painful) force. It would first hit inside my eye, which I would feel, and then the force, I guess, would travel through the soft tissue so that a fraction of a second later, I felt the same pulsing sensation in my top molars.
Anyway, it all went really well and I’m home and will take it easy tonight and tomorrow, and probably get back to work tomorrow evening for a couple of hours.
